In the fifth collaboration with Starboyjavi, from within the pistachio shell, Grupo Pistacyl emerges gracefully. This company, rooted in the rural heart of Valladolid, has succeeded in transforming the pistachio into a sublime expression of nature. Its dedication to producing 100% natural, unroasted pistachios stands out for its innovation and extreme care in handling each product. With a philosophy focused on preserving the nutritional qualities and authentic flavor of the pistachio, Pistacyl has managed to bring the essence of the countryside to a truly exceptional gourmet experience—especially through its gourmet box, which features a reproduction of one of the paintings from the Carmen Thyssen collection, Jardín de Soest, and also through its bold wine, Desacato.
Pistachio in All Its Forms
This time, I have drawn inspiration from both pistachios and wine to create an artwork where the central narrative revolves around the concept of shapeshifting. This is a theme that fascinates me—it carries an element of magic and fantasy. As many may know, in various tales, famous druids and shamans could either change their own form or take on the shapes of other animals—something well understood by fans of Game of Thrones and other series or books.
This notion of transformation captivates me, and the pistachios from Pistacyl, with their diverse forms, have conveyed this concept beautifully. The first thing that stands out is that I decided to construct a multi-panel canvas—composed of six pieces. I will explain its significance further.
The resulting artwork is an abstract piece that blends the different textures of the pistachio with colors evoking the land, nature, and the earth, tinged with the hues of wine. You will notice that shades of green, gold-like and blue-brown tones predominate, symbolizing the rural landscape and the pistachio’s natural essence, as well as the boldness of wine with its emergence in this artistic pairing. Additionally, I wanted to reference the rich visual language of Jardín de Soest by Christian Rohlfs—the inspiration behind the Thyssen box. Across the different panels that make up the canvas, one can journey through the granular textures reminiscent of pistachio granella and pistachio earth, past the smooth spread of pistachio paste and the creamy blend of pistachio and chocolate. The wine takes on a leading role as a catalyst for transformation—it is the magical solution that, like alchemy, enables the pistachio to take on its many forms.
Choosing the multi-panel format allowed me to represent, at first glance, the four distinct pistachio textures found in the gourmet box, along with one for the whole pistachio and another for Desacato wine. While each panel does not individually depict a specific form, they are all infused within the composition, forming a greater whole with a holistic meaning beyond the individual nature of each pistachio form and the wine.
Although the panels have an order, they can certainly be interchanged, achieving combinations that reflect the versatility of the product.
Furthermore, in reference to that overarching symbolism, at the center of the composition, you will find an oval of various green tones—a definitive representation of the pistachio in its purest and original form. This element acts as a vibrant and dynamic contrast, symbolizing the reunion between the modern, the refined, and the primal essence of the pistachio. It reminds us that while we all evolve and transform throughout life, we remain ourselves—with our essence intact, which is what makes us unique and shapes who we are. I believe it is crucial never to lose or distort that essence.
Artistic Legacy in a Shell
Next, I will explore the products one by one, as I always do—based on my personal experience. This is not an analysis or description of them, but rather my own subjective assessment within the framework of this creative process.
Thyssen Box
The Thyssen Box from Pistacyl is a true work of art in its own right, the result of its collaboration with the Museo Nacional Thyssen-Bornemisza. It reflects the company's commitment to art, culture, and excellence, creating a unique synergy between gastronomy and artistic expression. Inspired by the expressionism of Rohlfs' Jardín de Soest, every detail honors artistic tradition and nature. The four products inside—pistachio paste, granella, pistachio earth, and pistachio and white chocolate cream—offer a unique gastronomic journey, ideal for those who love creativity in the kitchen.
The pistachio paste opens up new dimensions in ice cream and baking. I have tried it alone, spread on toast, and I found it incredibly intense and satisfying—I love that pure, intense pistachio flavor.
Moving on to the pistachio and white chocolate cream, it is the perfect accompaniment for indulging the palate with its exquisite combination. I also enjoy it spread on toast, and I used some in a cheesecake recipe—for both the composition and the topping—made for my father’s birthday celebration.
As for the granella, I find its finely chopped pistachio texture harmonious, convenient, and versatile for various recipes. I used it as a topping on the cheesecake’s surface, sprinkled over the top. It also worked wonderfully for making a rich pistachio sauce with great consistency.
Finally, the pistachio earth has a fine texture that works beautifully as a seasoning or garnish for any dish. I must confess that, since I sometimes tend to be a bit indulgent, I ate it by the spoonful—again and again—because I simply couldn’t stop! This is my favorite form of the pistachio from the Thyssen Box.
Natural Pistachios
Pistacyl also sent me a sample of their pistachios in their raw, natural state—untainted by roasting, salt, or additives. They truly capture the pistachio’s pure essence. Their size is impressive, and their taste is remarkable.
Desacato Wine
Finally, Desacato wine adds a rebellious and bold touch to this sensory experience. With its daring character and unique aromatic profile, it complements the pistachio’s flavors, creating a sophisticated pairing that encourages culinary exploration. As I mentioned earlier, I see it as a transformative key—an element of change that allows each pistachio form to shift and evolve. It feels like a wine specifically crafted to accompany pistachios, making the combination simply perfect.
Mystically Delicious Shapeshifter
Both the artwork and Pistacyl’s products speak not only of transformation but also of identity. Just as pistachios can take on different forms while retaining their essence, we too evolve, yet our core selves remain unchanged. The fusion of art and gastronomy showcases how boundaries between disciplines can blur, creating sensory experiences that transcend the ordinary.
Perhaps the true magic of the pistachio lies in its ability to adapt without losing its authenticity—reminding us that change doesn’t mean letting go of who we are, but rather finding new ways to express ourselves. It’s a message that goes beyond food and art, connecting to the essence of personal growth and evolution.
